  • 1 octopus (approximately 2 pounds)
  • 2 cups Arborio rice
  • 4 cups seafood or vegetable stock
  • 1 cup white wine
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Rinse the octopus under cold running water to remove any surface impurities.

Remove the beak located at the center of the tentacles by turning the octopus upside down and carefully cutting it out.
